Sherrie’s Breakfast Pizza

Ingredients
- 12″ HRI Classic Cheese Pizza
- For the Béchamel Sauce:1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 1/8 teaspoon freshly grated nutmeg
- Kosher salt
- Freshly ground black pepper
- For the Roasted Potatoes:2 cups diced red potatoes
- 2 Tablespoon extra-virgin olive oil
- For the Candied Bacon:1/2 pound thick-cut bacon (6-7 slices)
- 1 Tablespoon real maple syrup
- 2 Tablespoon light brown sugar
- To Top:1 package fresh pork patties (8 pieces), cooked in a skillet until light golden brown and cut into 6 triangles per patty
- Red pepper flakes
- 7 whole eggs
- 2 Tablespoon sliced green onions, green part only
- 1 Tablespoon chopped fresh flat leaf parsley
Directions
- For the Béchamel Sauce: Melt butter in a small saucepan. Add the flour and whisk for 1 minute or so. Add in slowly the whole milk while whisking continuously. Bring to a boil. Season with salt, pepper, and grated nutmeg. The mixture will thicken up. Take it off the heat and place in a bowl. Put a plastic wrap directly on top to prevent a skin from forming. Keep refrigerated until ready to use
- For the Roasted Potatoes: In a baking sheet, toss together the diced potatoes, extra-virgin olive oil, salt and pepper. Bake at a preheated 350 degree Fahrenheit oven until light golden brown and tender, about 25 to 30 minutes. Set aside
- For the Candied Bacon: Place a metal wire rack on top of a sheet pan. Lay the slices of bacon directly on the wire rack. Brush with maple syrup and topped with brown sugar. Sprinkle with freshly ground black pepper. Bake until partially-cooked and light golden brown. Let it cool and cut into small pieces. Set aside
- To Assemble: Pre-heat oven to 450˚F and set oven rack to the middle position. Place the pizza directly on the middle rack. Bake for 10 minutes. Place the pizza on top of a sheet pan. Spread the béchamel sauce. Season with red pepper flakes. Lay a bed of roasted potatoes. Top with breakfast sausages and candied bacon. Make 7 little nests and crack a whole egg in each one of them. Season with salt and pepper
- Place it back in the oven for 15 more minutes or until the eggs are cooked to your liking and the crust is golden brown
- Garnish with scallions and parsley
- Cut into squares and enjoy 🙂
